Japanese blades are ground to a finer angle than Western knives — typically 15° per side versus 20–25°. That thinner geometry means less resistance through food, which translates to cleaner cuts with noticeably less effort. This knife keeps that edge for months, not weeks, thanks to the hard VG-10 core at its heart.
The 67-layer Damascus cladding isn't decoration. It wraps and protects that hard core, giving the blade flex and corrosion resistance without compromising the edge.
